- Slice the remaining bell pepper so you have strips or "stalks" for your flowers.
- Oven method
- Precook pepper bottoms, strips and rings for 10 minutes. Remove then let cool.
- Spray a baking dish with nonstick spray and add pepper bottoms and rings to the pan. Crack an egg in each pepper bottom and ring. Bake in oven for 5 to 10 minutes until egg is cooked thoroughly and yolk is sunny side up.
- Skillet method
- (Best done for bell pepper rings)
- Add rings to a skillet sprayed with nonstick cooking spray.
- Over low to medium heat, crack an egg in each pepper ring carefully. Cover skillet and allow to cook for 5 to 10 minutes until egg is cooked thoroughly and is sunny side up. Do not over cook eggs, like I did in my picture lol
- Once all bell pepper flower eggs are completely cooked, transfer to a plate. Add bell pepper strips for the fllower stalks, and baby spinach leaves for flower leaves and cilantro or parsley to garnish for the "grass."
