- Preheat oven to 170C
- In a large bowl combine all dry ingredients.
- In another bowl, melt coconut oil and honey. Heat till coconut oil is runny. Add vanilla then pour over the dry ingredients. Mix thoroughly. Hands are good!
- Spread granola on baking trays lined with silicone paper. Not too thickly.
- Bake for 30 mins stirring at 10 mins and 20 mins. You need to check it often in the last 10 mins…will burn if you're not careful!
- Remove from the oven when done…dont stir it! Leave it to cool completely.
- Once cool break into chunks…or whatever size you prefer…eat with yoghurt and berries 😊
