Instructions to make Bhindi ki Bhujiya (Okra):
- Wash the okra and pat dry with absorbent paper (it should be dry to cut or they will become slimy).
- Slice of tops and and ends and discard. Slice okra crosswise into 1/2 inch thickness, keep aside.
- Heat oil in a pan. Add onion and sir fry until light brown.Add cumin seeds, ginger garlic paste and fry for few seconds.
- Add tomatoes, coriander powder, red chilli powder, turmeric powder and salt.
- Add 1/2 cup water; mix well and let it simmer for 10 - 15 minutes till water dries out & oil separates.
- Add okra; mix well and cook on low heat (stirring occasionally so they do not stick to the pan) until okra is done.
- Serve with Chapati.
This dish is eaten during breakfast, lunch and dinner. This goes well with Rice and Roti or Chapati. Bhindi is a seasonal vegetable and we cook it by several methods. Aloo Bhindi Bhujiya, aloo bhindi fry, sukke aloo bhindi or aloo bhindi sabzi whatever we may call it but this is one of the best bhindi (okra) recipe. It's our family favourite and if anything that we love with bhindi then that is this bhindi aloo fry from childhood.
