  2. Place in the oven and roast the sausage and vegetables for 15 to 20 minutes until they are lightly browned, stirring halfway through the roasting time
  3. Meanwhile, rinse the rocket leaves and pat them dry. line a serving platter or four individual serving plates with the Rocket. Spoon the sausage and vegetable mixture, with their pan juices, over the the leaves and serve immediately
