Lightly pan fry the walnuts in the coconut oil and sprinkle the chinese five spice powder over the walnuts to coat while cooking. Once the quinoa and beetroot are cooked, allow them to cool.   4. Reduce the heat to medium low, cover and simmer until quinoa is tender and liquid has been absorbed, about 15 minutes.
  5. Fluff the quinoa with the help of fork.
  6. In a salad bowl, add quinoa, beetroot, cucumber, onion and cilantro and mix well.
  7. Pour the dressing over the tossed salad and serve chilled!!.
