  1. Peel and cut up sweet potatoes into 2-3 inch chunks (much like you would when making mashed potatoes). I usually slice them every 2-3 inches and then quarter each slice. Uniformity isn't necessary, as they'll break down a bit while cooking.
  2. Throw the sweet potatoes into a large pot and cover with water. Add the butter.
