  1. Make ready Beef strips marinated in ginger, garlic sesame oil and corn oil
  2. Prepare Fresh rice noodles, 100 gms per serving
  3. Get handful snow peas or sweet peas boiled and slice thinly
  4. Prepare 2 handful's bean sprouts
  5. Prepare 3-4 sprigs green onions thinly sliced
  6. Make ready 1 cup mint leaves optional
  7. Make ready 1/4 cup toasted sesame seeds, 1/2 cup roasted peanuts
  8. Prepare Fried shallots and coriander for garnish
  9. Make ready to taste salt and pepper
  10. Prepare for Dressing: 2 tbsp each lime juice, fish sauce, rice vinegar, 6 tbsp thai sweet chilli sauce mixed together
Instructions to make Noodle Salad:
  1. Cook beef strips on a hot skillet until medium rare
  2. Place noodles in a bowl, pour boiling water, let it stand for 2 minutes and drain. top with beef, snow peas, mint, bean sprouts, onions, dressing; toss together, check for seasoning, portion into individual serving bowls, top with sesame seeds, peanuts, garnish with fried shallots and coriander and enjoy!!
