Use tapioca flour in your hand if need it, as the dough can be a bit sticky. Make either long cylinder or a ball shape. Fyi: the cookie shape is NOT normal, but I like it as I prefer to have more crispy texture when fried (google pempek for more type or shape).
- Boil lots of water in pan. This should be high heat, in mine its number 4. put a teaspoon of oil. Start putting the shape pempek into the pan, and wait till it float, this should take 5 minutes most. Dont overcrowd the pans. When it float, leave it there for Another 3 minutes or so.
- To eat: fry pempek in hot oil for about 5 minutes, just till it change color to bit brown. To serve, simply sliced them, put in a bowl. you can add cucumber sliced.
- Note: to keep in fridge, I usually used a bit of oil, just so it does not stick together, this is optional. If you want to freeze, simply put per portion in a plastic.
