Ragi dosa or finger millet dosa is a healthy South Indian breakfast recipe. it's a good time-saving breakfast recipe for busy working people and for the bachelors.this is an instant recipe.the prepared batter can be used immediately.no soaking, grinding and fermenting. South Indian fermented Ragi Dosa recipe made with whole Ragi millet and Urad dal. Here is how to do an awesome fermented Ragi dosa batter with Ragi Millet. I use whole Ragi and not Ragi flour.
Steps to make Ragi Millet Dosa (Ragi Dose):
- In a bowl, sieve all the three flours. Add salt and spice powders too and mix well.
- Then add curd, coconut, jaggery powder, ginger and chilli paste, hing and mix well. Then slowly while stirring, add warm water to make a thick but pouring consistency batter.
- Now cover and keep the batter for 10 minutes to get all the flours and flavours combined well.
- Heat a non-stick tawa or your dosa skillet and let it heat up till smoking. Then sprinkle water, wipe with a cloth. Then smear some drops of oil with a cut onion piece to get the dosa surface ready. You may use a pasty brush too.
- Now remove cover from batter and add soda, mix gently. Then pour a laddlefull on the tawa, swirl the batter in circles with ladle going towards edges. Sprinkle 1/2 tspoon cooking oil at the edges and cook on high flame till it starts turning golden and sides come off. Release the edges, turn the dosa over and cook from other side too till crispy.
- Remove in a serving plate and present immediately with a green chutney made of fresh coconut+ green chilli+ginger+ corinader leaves+ tamarind+roasted gram+ salt+ curry leaves and garlic. Enjoy the delicious dosa with a cup of hot filter coffee!
In this recipe I mixed Ragi flour with Multi Millet flour to make some crisp Dosas. You can also use Jowar or Bajra instead of Ragi. This recipe was shared by one of my cooking expert friend.
