  1. Pre-heat the oven 230 degree C
  2. Prepare fish by gutting, taking out gills and cutting fins&tails (or ask fish monger to do them). Clean inside and outside the fish thoroughly.
  3. Score two sides of fish.
  4. Brush olive oil inside throughout the fish and brush Sun flower oil (or other high heat oil) outside the fish. Sprinkle sea salt and pepper on both sides of fish
  5. Stuff Rosemary, thymes, ginger, garlic and lemon in the fish. Move both prepared fish to the tray.
  6. Put the tray in the top shelf of the oven (no cover) for 20 minutes. Check the fish at 15-18 minutes. Cooking time depends on size of your fish. When fish’s cooked take them out of the oven.
  7. Squeeze lemon on your fish (optional).
