Instructions to make Eggplant meatballs:
  1. Pre heat 425°. Cut your eggplant into 1 inch squares.
  2. Heat oil in a large saute pan. Add eggplant. Add 1/4cup water and salt pepper to taste.
  3. Saute till tender, 10 -12 minutes.
  4. Add eggplant to a food processor. Pulse until chopped fine..
  5. In a large bowl, add bread crumbs,cheese, egg, eggplant, basil, oregano
  6. Make your meatballs and place on a greased baking sheet. Bake 15 minutes, flip, then bake another 10 minutes.
  7. Add your meatballs into some sauce and simmer for 5 minutes. Serve over pasta enjoy.
