The ingredients needed to make Drunken Arugula Salad:
  1. Prepare 1/2 cup Lemon juice (2 lemons)
  2. Prepare 1 tsp Sugar
  3. Make ready 1/2 cup Canola oil
  4. Take 2 clove Garlic
  5. Prepare 1 packages Arugula
  6. Make ready 1 box Mushrooms
  7. Get 1 as needed Sunflower seeds or pine nuts
  8. Prepare 1 cup Drunken goat cheese
Steps to make Drunken Arugula Salad:
  1. Set oven to 425. - - Quarter mushrooms and toss in olive oil. Spread on baking sheet and bake for appx 15 mins or until they have dried out. (Moist mushrooms won't do). Set aside once done.
  2. While mushrooms are baking toast pine nuts or sunflower seeds
  3. Mix cooled mushrooms into salad bowl with arugula, cheese and pine nuts or sunflower seeds.
  4. In food processor mix together lemon juice, sugar and pressed garlic. Slowly add in the canola oil. - - Once blended coat salad and serve!!
  5. Grate drunken goat cheese. (Regular goat cheese will not work as it's too soft) - - Can replace with other cheese. I sometimes use asiago.
