- Whisk all the dressing ingredients in a small bowl and keep aside.
- Wash the beetroot and cut the ends of the beet and place in a pan of boiling water and boil for 5-7 minutes and set aside.
- Bring quinoa and 2 cups water in a sauce pan over high heat.
- Reduce the heat to medium low, cover and simmer until quinoa is tender and liquid has been absorbed, about 15 minutes.
- Fluff the quinoa with the help of fork.
- In a salad bowl, add quinoa, beetroot, cucumber, onion and cilantro and mix well.
- Pour the dressing over the tossed salad and serve chilled!!.
