- Prepare 360 ml Hot water

- Mix stock cube into 360ml of hot water until dissolved
- Put Quinoa into small pan and add water
- Bring to the boil then reduce heat and let simmer for 15/20 mins
- Add sprinkle of salt, pepper and corrianda as it simmers
- Leave to cool
- Add cucumber, tomatoes, spring onions and olives
- Finish off with salad dressing of your choice
