These fantastic power packed nutritious greens are usually used in dal. I made this dish with thotakura/ amaranth greens that I harvested from my little container garden, took pictures and after a very emotional and whirlwind India trip completely forgot about it.

- In pressure cooker add washed moong dal, amaranth leaves, garlic, tomato, turmeric, hing, coconut oil, green chilli, salt and water. Close with lid and cook until it done. Once the pressure released mash and keep aside.
- Now heat medium kadai add coconut oil. Once oil hot add mustard and cumin. Once mustard done add red chilli, curry leaves.
- Now add the shallot. Once shallots saute a bit add chopped coriander leaves and add this to the mashed dal.
- Serve hot with rice and ghee. Its yummy and healthy food.
