The ingredients needed to make Sweet Potato Grits:
  1. Make ready 2 cup water
  2. Take 2 cup milk
  3. Take 2 medium sweet potatos, peeled & grated
  4. Take 1 cup stone-ground grits
  5. Make ready 1 coarse salt and freshly ground white pepper- to taste
  6. Take 1/4 tsp ground ginger
  7. Get 1 pinch ground cinnamon - to taste
  8. Prepare 1 tbsp unsalted butter
Steps to make Sweet Potato Grits:
  1. In a large, heavy saucepan, combine the water & milk and bring to a gentle boil over medium-high heat.
  2. Slowly add the grits, whisking constanly.
  3. Add sweet potato, season with salt & pepper.
  4. Decrease heat to low and simmer, stirring often, until the grits are creamy & thick - 45 to 60 minutes.
  5. Taste the grits and sweet potato to make sure both are cooked and tender. Add the ginger, cimnamon and butter (I added an extra tablespoon of butter). Taste and adjust for seasoning with salt and pepper. Serve immediately.
